Ingredients

Gummies
250 ml (1 cup) Allen’s apple juice
35 g (¼ cup) powdered gelatin (about 5 packs)
420 g (2 cups) sugar
60 ml (¼ cup) lemon juice

Garnish
30 ml (2 tablespoons) icing sugar

Directions
  1. Gummies: Oil a 20 cm (8 in) square baking pan

  2. In a bowl, pour half of the apple juice (125 ml / ½ cup). Add the gelatin and mix with the fork. Allow to expand for 5 minutes

  3. In a small saucepan, bring to boil the rest of the apple juice (125 ml / ½ cup), sugar and lemon juice. Simmer, stirring for about 2 minutes or until the sugar is completely dissolved. Add the gelatin mixture and continue cooking over low heat, stirring with a whisk until completely dissolved. Foam at this stage if desired.

  4. Pour into the baking dish. Let stand at room temperature for about 8 hours or until the gummies are firm

  5. Garnish: Pass the blade of a knife between the gummy and the mold. Cut in large dice by 1.5 cm (¾ in.). To make this step easier, the work surface can be lightly sprinkled with icing sugar.

  6. In a bowl, put the icing sugar. Coat the gummies well, a few at a time. In a sieve, shake the gummies to remove excess icing sugar

  7. The gummies are kept for about 2 weeks in an airtight container in a cool, dry place.
