Apple Joe Louis
For the cookies:
3 cups flour
1 tsp baking powder
½ tsp baking soda
1 ½ tsp cinnamon
½ tsp ground ginger
½ tsp nutmeg
½ tsp salt
½ cup butter, softened
¾ cup granulated sugar
¼ cup brown sugar
2 tbsp vegetable oil
¾ cup apple sauce
1 tsp vanilla extract
200 mL apple juice
For the glaze:
¾ cup softened butter
4 cups powdered sugar
½ tsp cinnamon
1/8 tsp nutmeg
1/8 tsp ginger
3 tbsp apple juice
1 tsp. vanilla extract
1 pinch of salt

For the cookies: Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.

In a medium bowl, combine all dry ingredients, set aside.

In a large bowl, beat butter with brown sugar and white sugar.

Stir in vegetable oil, applesauce, vanilla extract and apple juice.

With a spatula, gradually add the dry ingredient mixture to the wet ingredient mixture.

Divide the dough among the balls on the cookie sheet, making sure to space them out.

Bake for 12 to 15 minutes and refrigerate.

For the frosting: In a large bowl, whisk butter with confectioners’ sugar then stir in remaining ingredients.

Spread a small amount between two cookies and enjoy!
