Cranberry Apple Pecan Salad
Salad:
4 cups chopped kale
1 cup shredded brussels sprouts*
1 cup quinoa
1 cup apple slices
½ cup red onion, sliced
¼ cup chopped pecan
¼ cup dried cranberries
Dressing:
2 tbsp Dijon mustard
1 ½ tbsp Allen’s apple juice
1 tbsp lemon juice
1 tbsp maple syrup
¼ tsp. salt
¼ tsp. pepper
½ cup olive oil

In a bowl, mix all dressing ingredients and reserve.

In a large bowl, add all ingredients for the salad, Add dressing when ready to serve. Mix everything together. Enjoy.
For even more flavour, roast the pecan in a skillet until golden. Let it cool before adding to the salad.
